A lovely moist, lightly spiced cake which is a perfect way to use up windfall apples. Recipe sent in from one of our plot holders.
Ingredients
For the cake
- 3 peeled cored and sliced apples
- 10 oz plain flour
- pinch of salt
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 2 large eggs
- 10 oz white sugar
- 4 fl oz vegetable oil
- 1 teaspoon vanilla extract
- 100g chopped pecans or walnuts
For the topping
- 2 teaspoons white sugar
- 1 teaspoon cinnamon
Method
- Preheat oven to 170C (250F) Lightly grease a loaf tin.
- Sift flour, salt, cinnamon and baking powder into a bowl and set aside
- Beat eggs and sugar together in an electric mixer until light in colour. Beat in the oil until well mixed. Add the flour mixture and stir well.
- Add the vanilla, then fold in the apples slices and the nuts. It will be a stiff mixture.
- Pour the cake mix into the greased loaf tin.
- Mix the topping ingredients together and sprinkle over the cake.
- Bake in the pre-heated oven for 45 minutes or until a toothpick inserted into the centre of the cake comes out clean.
